Soya chunks manchurian
SOYA CHUNKS MANCHURIAN
INGREDIENTS
- Soya chunk – 1 cup [ 50 gms ]
- Ginger garlic paste – 1 tsp
- Red chilli pwdr – 1 tsp
- Red food colour – a pinch [ optional ]
- Cornflour – 2 tbsp
- Rice flour – 1 tbsp
- Maida / APF – 1 tbsp
- Onion chopped – 1 small
- Capsicum chopped – 1 small
- Finely minced ginger + garlic – 1 tbsp
- Soya sauce – 2 tsp
- Chilli sauce – 2 tsp
- Tomato ketchup /sauce – 1 tbsp
- Vinegar – ½ tsp [optional ]
- Pepper pwdr – 1 tsp
- Corn flour mixture – 1 tbsp corn flour mixed in ¼ cup water
- Spring onion greens /coriander leaves finely chopped garnish
- Oil to deep fry or shallow fry
- Olive oil / oil – 1 tbsp
- Salt to taste
PREPARATION
- Before you start making Chinese cuisines always keep all ingredients ready.
- Soak the soya chunks in hot water for 5 mins. After 5 mins wash , drain and squeeze off the excess water . Boil it with salt ,till it becomes soft and doubles in size . Again drain and squeeze of the excess water OR Pressure cook it upto 2 whistles .
- Marinate the soya chunks with 1 tsp ginger garlic paste + chilli pwdr + food colour + salt + corn flour + rice flour + maida . Mix well and keep aside for sometime .
- Deep fry or shallow fry the marinated soya chunks till golden and crispy.Remove on absorbent paper and keep aside
- Chop the onion and capsicum lengthwise or cubes .
- Make a mixture of soya sauce + chilli sauce + tomato sauce + 1 tbsp water + vinegar.
METHOD
Heat 1 tbsp oil in a pan , add finely chopped ginger + garlic and fry .[colour should not change ]
Add onion and fry till translucent .
Add capsicum and fry .[ should be crunchy and not soft – don’t cook it fully ]
Add the sauce mixture + salt and mix well.[ you can add a pinch of ajinomoto also for more flavour]
Add the cornflour mixture , stir and cook till the sauce becomes thick and shiny .
Add the fried soya chunks and mix well .
Finally garnish with spring onion greens + coriander leaves and off the flame.
Serve hot as starter.
NOTES
- Adjust sauce as per your taste.
- You can add a pinch of ajinomoto.
- I had red and yellow colour bell pepper so used it.
- Same recipes you can try with any fried nuggets or even potato French fries or prawns .
- Don’t add too much of soya sauce , the dish will become dark in colour .
- Taste after adding the sauces to adjust the flavour.
- I used mini chunks , if using big ones after boiling you can chop it .
- You can make it dry or saucy.
- Serve immediately – keep ingredients ready and cook while serving .
