INGREDIENTS

  • Ladies finger – 250 gms [ tender and small ]
  • Besan /gram flour – 4 tbsp
  • Chilli pwdr – 1 tsp
  • Coriander pwdr – 1 tsp
  • Chaat masala pwdr – ½ tsp
  • Amchur pwdr – ¼ tsp
  • Jeera – 1 tsp
  • Oil – 2 or 3 tbsp
  • Water – 2 tsp
  • Turmeric pwdr – ¼ tsp
  • Garam masala pwdr – ¼ tsp
  • Salt to taste

PREPARATION.

  1. Clean ,wash and pat dry the bhindi with a kitchen towel .Chop the top portion and slit it half lengthwise . [don’t cut it into two ]
  2. Dry roast the besan on low flame for 4-5 minutes till aromatic .[colour should not change much ]

METHOD

Take the roasted flour in a small plate and add all the other ingredients chilli pwdr + chaat masala + amchur pwdr + turmeric + garam masala + salt + 1 tbsp of oil . Mix well with clean hands .

Stuff each bhindi with a tsp of the stuffing .

Heat 1 tbsp oil in a non stick pan ,add jeera and let it crackle .

Arrange the stuffed bhindi, drizzle few drops of water and cook for 1 min on medium flame.

Lower the flame ,cover and cook for 6 – 7 mins by turning in-between .[ be careful  ,don’t burn it ]

Remove the lid ,toss it  and again cook for a minute .

Stir gently and off the flame .

Serve as side dish .

NOTES

  1. You can also add ½ tsp of sugar pwdr to the stuffing .
  2. You can add 2 tbsp of roasted peanut pwdr or roasted sesame .
  3. Instead of amchur pwdr you can use lemon juice.
  4. You can also add green chilli + ginger + garlic paste.
  5. You can garnish with finely chopped coriander leaves / freshly grated coconut .
  6. Don’t reduce oil .
  7. Adjust masalas as per your taste.
  8. Just drizzle few drops of water ,if you add more water it will become sticky and will not not cook properly .
  9. You can make the stuffing and store it in fridge and use it whenever required .
  10. You can use this stuffing in other veges also .
