Shikanji premix /Indian lemonade premix
SHIKANJI PREMIX / INDIAN LEMONADE PREMIX /INSTANT LEMON JUICE POWDER /LEMONADE PREMIX /LEMON JUICE POWDER / SHIKANJI PREMIX

INGREDIENTS
- Lemon juice – ¼ cup
- Granulated Sugar – 1 or 11/4 cup [ don’t use sugar pwdr ]
- Salt / blacksalt – 1 tsp
METHOD
Roll each lemon by applying pressure to extract juice easily .
Squeeze the juice. Discard the seeds .
Take the lemon juice and sugar in a big plate . [ bigger the pate ,lesser the time of drying ]
Give a nice mix and spread it in a very thin layer so that it dries off fast .
Keep it under the fan for 8 to 10 hrs.
Now take a sharp object and scrape it and mix it .
It will be bit wet .
Again spread it in thin layer and keep it to dry .
Repeat the process of drying for 8 to 10 hrs and scraping /mixing it .
By 4th day the mixture will harden and there will be no moisture .
For me it took 4 days. It takes a ound 4 to 6 days depending on weather.
Loosen the harden mixture and break it into small pieces using a heavy object .
Transfer to a mixie jar , add 1 tsp of regular salt or black salt and grind it into fine pwdr .
Sieve it and store it in an airtight container .
Shelf life 3 to 4 mnths at room temperature.
HOW TO MAKE LEMON JUICE USING PREMIX .
Take 1 or 1 ¼ tbsp pwdr in a glass.
Add ice cubes + 250 ml water /soda and mix well. Also add few torn fresh mint leaves.
Serve chilled .
NOTE
- While grinding we can add other shikanji masalas like roasted jeera pwdr /black pepper /cardamom /fennel seeds /
- We also get ready made shikanji masala pwdr which we can add to our lemonade premix.
- For colourful shikanji pwdr add few drops of food colour .
