Val papdi chi bhaji
VAL PAPDI CHI BHAJI / GOAN STYLE STIR FRIED BROAD BEANS /PAPDI STIR FRIED IN GREEN MASALA
Broad beans are one of the healthiest vegetables for your heart. A good source of vitamin A, K, C, proteins and folate . It boost your heart health by reducing the risk of iron deficiencies. Vitamin B and folate in this vegetable promote blood cell development, boost energy and keep your brain healthy as well.
Broad beans are packed with nutrients. Mainly, they are loaded with protein, folate and numerous other vitamins and minerals.
INGREDIENTS
- Flat green beans – 250 grms
- Oil – 1 tbsp
- jeera – ½ tsp
- mustard seeds – ½ tsp
- curry leaves – few
- Freshly grated coconut – ¼ cup
- Green chilli – 1 or 2 or as per taste
- Garlic – 4
- fresh coriander leaves – ½ cup
- sugar – ¼ tsp
- Salt to taste
- lemon juice – ½ tsp

Clean wash , rinse and wipe the papdis .
String the papdis , split it and chop it .
Heat oil in a pan , add mustard seeds + jeera and let it crackle .
Add the curry leaves and give a tir .
Add the papdis and stir fry for 1 min.
Sprinkle 1 tbsp water all over.
Cover and cook for 3 to 4 mins .
Stir in between .
Add salt and give a nice mix.
Add the ground masala and stir fry for 2 to 3 mins ,
Stir and fry till the raw smell of garlic leaves .
Don’t over cook the vege. It should have the crunch .
Once done ,s drizzle the lemon juice give a mix and off the flame.
Papdi sabi is ready to serve .
NOTE
You can also add small potato cubes .
