Neer dosa
NEER DOSA / INSTANT PLAIN RICE DOSA / TANDALACHE GHAVAN
INGREDIENTS
- Raw rice – 2 cup
- Freshly grated coconut – ¼ cup
- Salt as per taste
- Water – 4 – 4 ½ cups
PREPARATION
Clean ,wash and soak the rice for min 6 hrs or overnight. Drain the water and grind it with grated coconut . First grind without water . Once the rice gets coarsely powdered , add 1 cup water and grind . Give a gap of few seconds , add 1 more cup of water and grind it to a fine smooth paste without any grits . Remove the batter in a bowl . Wash the mixer jar with little water and add it to the batter. Add 2 more cups of water and mix it with your hands . Adjust salt . The consistency should be of milk or butter milk.
HOW TO TEST – dip a back of a spoon and check , the spoon should coat very lightly.
METHOD
Heat a frying pan / iron tava on high flame .
Once it is hot sprinkle few drops of water with hand , wipe it with a wet cloth.
Grease the pan .[ if using non-stick pan greasing is not required ]
Take a ladle of batter , pour the batter and swirl the pan [tilt from all sides ] so that the batter spreads on all sides. If you see any big hole or gap , pour little batter to fill the gap.
Lower the flame and cover with a lid. Cook for few seconds [ 25 – 30 sec].
Remove the lid and again cook it open for few seconds. [ it should not brown ,it has to be white in colour ]
No need to flip and cook .
Remove the dosa and fold it into a triangle.
Serve hot with any veg / non veg gravy or chutneys.
VARIATION – USING RICE FLOUR
INGREDIENTS
- Rice flour of good quality – 2 cup [fresh ]
- Coconut milk – ½ cup
- Water – 2 cup or as required
- Salt to taste
METHOD
Mix all the ingredients and make a smooth batter and proceed with the above method.
NOTES
- While pouring the batter for making each dosa , the flame should be high and while cooking it has to be very low.
- While grinding add water gradually . [little by little ]if you add lot of water at one time while grinding then it is difficult to get smooth batter.
- Coconut can be omitted or reduced.
- Before making a new dosa mix / stir the batter well.
- Don’t stack [pile ] the dosa when it is hot .[ it will stick to each other]
- If the batter is thick you will not get dosa with holes. [ lacy ]
- There is no need of fermentation.
- Iron tava is good for making neer dosas.
