Spicy Chettinad mushroom masala
SPICY CHETTINAD MUSHROOM MASALA
INGREDIENTS
- Button Mushroom chopped – 2 cup
- Onion finely chopped – 1 big
- Tomato finely chopped – 1 big
- Oil – 1 tbsp
- Curry leaves – few
- Red chilli pwdr – 1 tsp or as per taste [ we are also adding peppercorns and whole red chilli ]
- Garam masala pwdr – 1/2 tsp
- Turmeric pwdr – ¼ tsp
- Freshly grated coconut – 1 ½ tbsp
- Coriander seeds – 2 tsp
- Saunf / fennel seeds – 1 tsp
- Pepper corns – 1/4 tsp
- Whole Red chilly – 1 or 2 [ adjust accordingly ]
- Salt to taste
- Finely chopped coriander leaves for garnish
PREPARATION
1 – Dry roast the coconut + saunf + peppercorns + red chilli + coriander seeds till golden brown. [don’t burn it ] Off the flame and add the chilli pwdr + garam masala pwdr + turmeric and mix well . Allow it to cool and grind it into a fine paste by adding little water.
2 – Clean ,wash and rinse the mushroom to remove the impurities. Chop it into 2 or slice it into medium size. [while cooking it shrinks ,so don’t chop it finely ] Don’t have to discard the black part .Just trim the stem little.
METHOD
Heat oil in a pan ,add onion + curry leaves and fry till light brown.
Add tomatoes and fry till oil separates.
Add the mushroom and fry till it sweats and shrinks. [ 2 or 3 mins]
Add the coconut paste + salt and mix well.
Fry for few mins ,
Add water and mix well. [don’t make it very thin ]
Simmer on low flame for 1 or 2 minutes.
Garnish with coriander leaves and off the flame.
Ready to serve as a side dish.
NOTES
- Adjust masalas as per your taste.
- It has to be of little thick consistency, don’t make it watery .
- Y not garnish with little fresh cream.
- You can add crushed garlic also while frying the onions.
- Garnish with fried cashews.
- For cleaning the mushroom ,you can soak it in warm water for sometime.
- While buying buy white and firm mushrooms. If the outer covering is discoloured then try peeling it .
