Baby corn soup
BABY CORN SOUP RECIPE
The baby corn is very beneficial while losing weight because it has lesser starch content. Apart from this, baby corn contains essential nutrients like magnesium, vitamin A, iron and phosphorous and all these making it a healthy food.
Baby corn comes with carotenoids or tetraterpenoids, elements that can promote the health of your eyes. Carotenoids is also great in reducing the risk of cataracts. So, pick those beautiful yellow veggies and keep your eyes healthy.
INGREDIENTS
- Fresh Coriander leaves with tender stems finely chopped – ½ cup
- Oil / butter – 2 tsp
- Cinnamon – tiny piece
- Bayleaf – 1
- Ginger finely chopped or grated – 1 tbsp
- Garlic finely chopped – 1 tbsp
- Green chillies finely chopped – 1
- Onions chopped – 1 small
- Vegetable stock or hot water – 4 cup
- Baby corn thinly sliced – 2 cups
- Soya sauce – 1 or 11/2 tsp
- Sugar – ½ tsp
- Salt
- Pepper to taste
- Lemon juice as required
- Cornflour slurry – [ 2 tbsp corn flour + ¼ cup water ]

METHODS
Heat oil in a pan , add cinnamon + bayleaf + ginger + garlic + green chilli and stir fry for a min .
Add onion and stir fry for a min
Add baby corn and stir fry for a min .
Add the chopped coriander leaves and give a nice mix .
Add water / vegetable stock / hot water and bring it to a boil.
Add soya sauce + sugar + salt to taste , stir well and bring to a boil.
Add the cornflour slurry mix well and cook until the soup thickens abit and the soup gets a shine .
Healthy soup is ready to be served.
Serve hot with lemon juice and pepper pwdr .
Serve this soup as an appetizer or as comfort food on a rainy monsoon evening or sip on it when you’re sick. Soups are great to have during winters or when you are not keeping well.
NOTES –
- Adding cornflour slurry will give a slightly thick consistency. however, it is optional.
