Crispy veg nuggets recipe

A  nugget is a  product made from veg or non veg ingredients  that is breaded or battered, then deep-fried or baked. Nuggets have become a popular fast food restaurant item, as well as widely sold frozen for home use.

Veggie Nuggets is an amazing combination of potatoes, vegetables and seasoning, that is finely coated in crispy golden bread crumbs.

INGREDIENTS

  • 5 medium boiled potatoes [ mashed or grated ]
  • 1 small onion finely chopped
  • 2 tbsp boiled and lightly mashed green peas
  • 2 tbsp boiled corn
  • 1 small capsicum finely chopped
  • 2 tablespoons carrots finely chopped
  • 1 teaspoon red chilli flakes
  • 1 teaspoon oregano
  • ½ teaspoon black pepper powder
  • salt to taste
  • 1 tbsp ginger garlic paste
  • 2 tbsp corn flour
  • 2 tablespoons bread crumbs
  • oil for deep or shallow frying
  • 2 tablespoons refined flour
  • 2 tablespoons corn flour
  • water as required
  • 2 cup or as required bread crumbs [ use fresh bread crumbs ]

FRESH BREAD CRUMBS – also known as panko bread crumbs – Panko bread crumbs is a Japanese-style bread crumb made from white bread without the crusts [ edges of the bread ] . This results in a lighter, airier bread crumb that absorbs less grease and stays crispier for longer .

METHOD

  1. Take mashed potato , chopped onions, capsicum, green peas , carrots, red chilli flakes, oregano, black pepper powder, salt, ginger garlic paste and mix well.
  2. Add 2 tbsp corn flour + 2 tbsp bread crumbs and mix till everything is well combined.
  3. Take a small portion and shape the nuggets, grease your hands with oil and shape all the nuggets. [ ou can give any shape ]
  4. Prepare slurry in a bowl of 2 tbsp corn flour + 2 tbsp  + ½ cup   Mix till it becomes smooth. [ not very thick nor thin ]
  5. Now coat the nugget in the slurry and immediately coat them in fresh crumbs from all sides..
  6. Refrigerate for 15 – 30 mins minutes before frying..
  7. Heat oil in a deep pan and once its medium hot , slide in the nuggets and fry for 2-3 minutes from each sides or until golden brown and crispy.
  8. Serve immediately with ketchup or chutney.

NOTES

  1. You can store the unfried nuggets in an airtight container and freeze them for upto a month
  2. You can use any vegetables of your choice like boiled corn ,cabbage ,beans etc.
  3. You can replace bread crumbs with crushed corn flakes too.
  4. Refrigerating the nuggets before frying is important , they wont break while frying.
  5. Use a mix of Bread Crumbs and Crushed Cornflakes for that extra crunch kick.
  6. We can also stuff a small piece of cheese cube inside the nuggets .
  7. Add spices as per your choice .
