Basic home made VEGETABLE stock
BASIC FRESH HOME MADE VEGETABLE STOCK
INGREDIENTS
- Bay leaf – 1
- Clove – 1
- Cardamom – 1
- Pepper corn – ½ tsp
- Cinnamon – a small piece
- Turmeric – 1/4 tsp [ optional ]
- Garlic – 3 cloves chopped
- Onions chopped – 1 sliced
- Carrot chopped – ½ cup
- Cabbage chopped – ½ cup
- Salt to taste
- Coriander leaves with tender stem chopped – 1 cup
- Water 1 ½ litre approximately
METHOD
Take a deep pot with water and all ingredients and keep on high flame .
Roll boil it on high flame for 10 mins .
- If not in hurry cook on medium to low flame for 20 mins .
Mash an strain the water and use as stock .
Use stocks in soup instead of plain water , it enhances the taste and flavour .
NON VEG STOCK – along with the veges use chicken /mutton bones .Here the cooking time will be more ,so increase water and cooking time .
NOTES
- We can use any veges like zucchini , mushroom ,tomato ,shallots ,capsicum spring onions ,leek
- We can add herbs lik thyme ,parsley ,basil ,rosemary , fennel ,pepper , clove ,star anise ,jeera etc .
- You can store in fridge and use .
