CAPSICUM ALOO KI SABJI

capsicum aloo ki sabji

INGREDIENTS

  • Capsicum – 1 big cubed
  • Boiled potato – 2 cubed
  • Onion finely chopped – 1
  • Tomato finely chopped – 1
  • Oil – ½ or 1 tbsp
  • Jeera – 1 tsp
  • Chilli pwdr – 1 ½ tsp or as per taste
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – ¼ tsp
  • Finely chopped coriander leaves for garnish.
  • Kasoori methi pwdr – ½ tsp optional
  • Salt to taste

PREPARATION

Pressure cook the potatoes till soft – don’t over cook . Peel and cube it .

METHOD

Heat oil in a pan ,add jeera and let it splutter .

Add onion and fry till light brown .

Add tomatoes fry till soft and oil separates .

Add capsicum , mix well and stir fry for few minutes .[capsicum should not become very soft ,it should have the crunch ]

Add chilli pwdr + turmeric + coriander pwdr + salt mix well and fry for few seconds .

Add the cooked potatoes and mix well.

Sprinkle few drops of water, cover and cook for a minute till all the masalas blend together.

Sprinkle kasoori methi pwdr and mix.

Off the flame and garnish with coriander leaves .

Serve as a side dish .

NOTES

  1. You can sprinkle chaat masala in the end .
  2. Some add garam masala pwdr.
  3. Y not add a tbsp of ketchup for variation .
  4. You can add cooked green peas.
