Carrot rice
CARROT RICE
INGREDIENTS
Cooked rice – 3 cup [ grains should be separated ,not overcooked ]
Grated carrot – 1 cup or more
Finely chopped onion – 1
Chopped green chilli – 2 or as per taste
Ginger garlic paste – 1 tsp
Curry leaves – few
Ghee + oil – 1 tbsp
Whole garam masala – 1 small piece of cinnamon + 1 clove + 1 cardamom + 1 bayleaf + 3 black pepper
Jeera – ½ tsp
Finely chopped coriander leaves for garnish
Salt as required.
METHOD
Heat oil + ghee, add the whole garam masala and allow it to splutter . [don’t burn it ]
Add onions + green chilli + curry leaves and fry till translucent .
Add ginger + garlic paste and fry till raw smell leaves .
Add garam masala pwdr and fry for few secs.
Add the grated carrot + salt .
Stir fry for some time ,it should not get fully cooked .[ crunchiness should be there ]
Add the rice and mix well .
Cook for sometimes and off the flame .
Garnish with finely chopped coriander leaves .
Serve with any side dish .
NOTES
1. The above recipe is like a simple pulao recipe, you can give a variation by just giving tadka [phodni] or like lemon rice or simple fried rice .
2. Add more carrot as it shrinks.
3. This recipe is a good way of giving carrot to your kid.
4. While tempering you can add peanuts or 1 tsp of urad dal or 1 tsp of chana dal or even cashew .
5. I have used leftover rice.
6. Give a twist by adding sambar pwdr or pav bhaji masala instead of garam masala pwdr.
