PARATHAS

INGREDIENTS

  • Maida/multipurpose flour – 1 cup
  • Wheat flour – 1/2 cup
  • Oil for kneading the dough and frying the parathas
  • Water for kneading
  • Salt as per taste
  • Beaten egg with salt – 2

METHOD

Make a soft dough with the flours, salt and little oil.

Cover with a damp cloth and keep aside for sometime.

Now take small balls little bigger than regular chapatti and roll it .

You can roll into little thick or thin parathas. Half cook the paratha on a hot tava on both the sides.

Put oil and cook on both sides. [I avoid oil]

Keep the paratha aside.

On the same tava put little beaten egg, then quickly put the paratha and allow the egg to cook.

Turn/flip the paratha and cook evenly. Keep aside.

ASSEMBLING THE ROLL

INGREDIENTS

  • Chicken tikka
  • Thinly sliced onions
  • Chaat masala
  • Tomato sauce/chilli sauce
  • Green chutney [optional]
  • Mayo
  • Lemon juice

METHOD

Place the paratha with the egg side on the top.

Lay few pieces of chicken tikka in a straight line.

Sprinkle chaat masala , then place the onions.

Add the sauce and green chutney.

Spread few coriander and mint leaves.

Squeeze few drops of lemon juice.

Roll the paratha tightly.

Wrap it in a thick tissue paper and serve hot with green chutney .

Green chutney  = grind 1 cup coriander and 1/4 cup mint leaves + green chilli + curd +onion + salt.

NOTE

  1. You can avoid green chutney.
  2. Instead of chilli sauce just use tomato sauce for kids.
  3. I prefer thin parathas.
  4. I have not used egg.
  5. By adding wheat  flour you reduce the rubbery or hard texture of the parathas.Wheat flour makes it soft.
