DABELI / KACCHI DABELI RECIPE
Dabeli, kutchi dabeli or double roti is a popular snack food of India, originating in the Kutch or Kachchh region of Gujarat.
It is a sweet snack made by mixing boiled potatoes with a special dabeli masala, putting the mixture in a ladi pav (burger bun), and serving it with chutneys made from tamarind, date, garlic, red chilies and other ingredients. It is garnished with pomegranate and roasted peanuts.
Dabeli literally means “pressed” in Gujarati language.The dish is said to have been invented by Keshavji Gabha Chudasama (also known as Kesha Malam), a resident of Mandvi, Kutch, in the 1960s. When he started business he sold dabeli at the price of one anna or six paisa. His shop is still there in Mandvi, run by a later generation of his family. Today, dabeli masala made in the Kutch region are said to be most authentic. Bhuj and Nakhatrana towns of Kutch are also known for authentic dabeli apart from Mandvi.
FOR MAKING DABELI MASALA
INGREDIENTS
- 1 tsp cumin seeds [jeera]
- ½ tsp fennel seeds [saunf]
- 1tsp Coriander seeds
- 1 stick cinnamom
- 5 red chillies without stem
- ½ tsp black pepper
- 3 clove
- 3 blades of javitri [mace]
- 1 star anise [chakra phul]
- 3 Cardamom
- ¼ tsp hing
- ½ tsp ginger pwdr
Roast all the above masala and grind it to fine pwdr.
TO MAKE KHAATI MEETHI CHUTNEY
INGREDIENTS
- 1 small lemon size tamarind
- 20 deseeded dates [khajur]
- 2 tsp Jaggery [optional]
- 1 tsp roasted cumin pwdr
- Water as required.
METHOD
Pressure cook tamarind and dates [2 whistles].
Grind it into a fine paste by adding water.
Extract the pulp using a strainer.
Add 1 1/2 cup water to the pulp and boil it in a pan.
While boiling add the jaggery and cumin pwdr.
Cook till the mixture comes to a medium consistency [not very watery or very thick]
FOR GARLIC CHUTNEY – garlic chutney for chat items
INGREDIENTS
- 10 clove of garlic
- 10 red chillies without stem and seeds.
METHOD
Boil the red chilli for 10 mins.[or soak it in hot water for 30 mins]
Once cool grind it with garlic into fine paste by adding water.
FOR DABELI FILLING
INGREDIENTS
- 500 gms potato [cooked and mashed well]
- 50 gms OR 3 tbsp dabeli masala pwdr.
- 3 or 4 tbsp khatti meethi chutney
- 1 ½ tbsp oil + little butter
- 2 cup Water OR as needed
- Salt as per taste if required
For garnishing – finely chopped coriander leaves, pomegranate seeds, grated coconut [dessicated coconut]
METHOD
Add 2 cups of water to the mashed potato and mix it well.
Add the dabeli masala pwdr, sweet chutney [ as required ] and salt to it and mix well.
Heat oil in a pan. Add the potato mixture to it and cook for few mins till medium consistency. [ it should not be thick]
Transfer the mixture in a big plate.
Garnish it with pomegranate, grated coconut ,finely chopped coriander leaves.
MASALA PEANUTS
INGREDIENTS
- 1/2 cup skinless roasted peanut
- 1 tsp oil
- Chilli pwdr + turemeric + chaat masala + black salt as required + amchur pwdr + coriander jeera pwdr + sugar pwdr [ all as per taste ]
METHOD
Heat 1 tsp oil add the peanuts and fry for few seconds .
Off the flame and add all the masalas and mix well till all the ingredients blend well .[ don’t burn ]
FOR ASSEMBLING THE DABELI
- Special dabeli pav
- Masala peanut
- Finely chopped onion
- Fine nylon sev

- Butter.
METHOD
Slit open the pav from 2 sides [v shape as shown in the pic ]
Apply little sweet chutney on one side and garlic chutney on other side.
Place a 1-2 tbsp of filling inside and close it.
Heat a tawa and add little butter.
Place the stuffed pav on it and fry till it becomes little crispy from both sides.
Open the pav sprinkle the peanut ,onion and sev inside.
Serve it with extra peanut ,onion and sev around the dabeli on the plate.
NOTE
- I have used readymade dabeli masala pwdr [ 25 rs for 50 gms]
- You can also try with pav bhaji masala pwdr.
- You can also add lemon juice to the filling.
- Special dabeli pav are soft and round.
- You can also make cheese dabeli – after roasting the dabeli , add loads of grated cheese inside the dabeli
- You can add lilltle orange food colour to the filling.
- Masala pwdr has to be added as per taste , add little by little and keep tasting till it meets your taste bud.
- Sweet chutney as to be added as per the requirement – some like sweet and some like spicy .
