INGREDIENTS
- Egg – 3 [ hard boiled ] – How to boil eggs
- Oil – 1 tbsp
- Onion finely chopped – 1
- Tomato finely chopped – 1 [even puree will do ]
- Green chilli – 1 broken
- Ginger garlic paste – 1 tsp
- Coriander leaves to garnish
- Garam masala pwdr – ¼ tsp
- Chilli pwdr – ¼ tsp [optional]
- Turmeric – ¼ tsp
- Curry leaves – few
- Masala pwdr – 1 tsp pepper corns + ½ tsp coriander seeds + ½ tsp fennel seeds / saunf [ roast all to golden brown and grind it into a coarse pwdr ]
- Salt to taste
PREPARATION
Boil the eggs for 10 – 12 minutes. Remove it and keep it in cold water for few minutes.Remove the shell and slice it into two.
METHOD
Heat oil in a pan.
Add onion + curry leaves + green chilli and fry till golden brown .
Add ginger garlic paste and fry till raw smell leaves.
Add tomatoes and cook till they become soft and oil separates.
Add chilli pwdr+ turmeric pwdr + garam masala pwdr + masala pwdr and mix well.
Fry for few seconds .
Add ¼ cup of water , mix well.
Place the eggs upside down as shown in the pic.
Simmer on low flame for few minutes till either it becomes dry or with little gravy.
Garnish with coriander leaves .
Serve hot as a side dish.
NOTE
You can adjust spiciness as per your taste.
