How to make puri for pani puri

HOW TO MAKE PURI FOR PANI PURI

INGREDIENTS [ 50 puris ]

  • Regular sooji / rava – 1/2 cup   
  • Warm  water – 5 to 7 tbsp
  • Oil to deep fry
  • Electric puri press for getting even thickness for all puris

METHOD

Take warm water in a mixing bowl .

Now add the sooji to it.

***Remember we have to add sooji to the water . [ not water to sooji ]

Mix well.

Once you are able to handle the hot mixture start kneading it .

Knead well .

Knead it into soft dough similar to chapati dough .

if the dough is thick then the pooris will be hard , if the dough is loose then the pooris wil absorb oil .

Make small small portions of the dough .

Roll into smooth ball .Cover with a cloth and use .

Use a puri press as shown in video and make small puris OR we can roll it using a rolling pin into a circle of 5 cm diameter

Heat oil for deep frying .

Slide in the puris in hot oil ,reduce the flame to medium and fry .

Now deep fry till crispy and golden by flipping on both sides .

***Oil has to be hot while frying the puris .

Remove on absorbent paper .

Allow to cool and then pack it in air tight pkts or containers .

NOTES

  1. No need to add salt .
  2. Instead of warm water ,we can use club soda .
  3. No need to rest the dough .
  4. If the oil is too hot puris will burn ,and if warm then pooris will absorb oil .
  5. Keep flipping while frying .
  6. Spread the puris in a single layer [not one top of other ] after frying once it cools and becomes crisp then store it .
  7. Puris have to be thin else it will not puff .

Pani puri in 8 flavors

GARLIC PANI . Garlic pods , Chilly powder , Black salt , Salt , water , blend and dilute , adjust to your taste

HING PANI . Hing , Black salt , Tamrind extract, chat masala ,Salt blend and dilute , adjust to your taste

JEERA PANI . Roasted cumin powder , Black salt, Chat masala , Lemon drops , salt dilute and adjust to your taste

CORIANDER PANI . Coriander leaves , Green chilly , Black salt , lemon , salt , blend to a paste and dilute , adjust to your taste

GINGER PANI . Ginger paste , Jaggery , tamarind extract , Red chilly powder , Salt, chat masala , blend and dilute and adjust to your taste

MINT PANI . Mint leaves , Jeera powder , green chillies , Black salt , lemon drops , salt , blend and dilute and adjust to your taste

LEMON PANI . Chat masala , Cumin powder , Black pepper powder , Black salt , Salt and lemon drops, dilute and adjust to your taste

TAMARIND PANI . Tamarind extract, Chat masala , Salt, Cumin powder , dilute and adjust to your taste
