IDLI UPMA / LEFTOVER IDLI RECIPE / EASY SOUTH INDIAN IDLI UPMA
Idli upma is made from leftover idlis .A good way to use up lefover Idlis. Idli upma is the quickest that one can make under 10 mins. This can be enjoyed for a evening snack or quick breakfast.
Idli upma is a very simple and delicious dish made with leftover idlis. This is a very common breakfast dish in South India, which can be prepared in no time.
NOTE – Do not crumble hot idlis as it will not crumble but will end up into a sticky mass. The idlis have to be cold.
INGREDIENTS
- Refrigerated idlis – 4
- Onion – 1 small finely chopped
- Grated carrot – ¼ cup
- Grated beetroot – ¼ cup
- Green chilli – 1or 2 or as required
- Ginger grated – 1 tsp
- Ghee – 1 tsp
- Salt as required
- Oil – 1 tbsp
- Mustard seeds – ½ tsp
- Urad dal – ½ tsp
- Chana dal – ½ tsp
- Red chillies -2
- Curry leaves – a sprig
- Coriander leaves to garnish
- Fresh lemon juice for serving if needed
PREPARATION
Refrigerate idlis for 6 hours or overnight for best results.
Crumble the idlis coarsely with clean hands.
TIP – You can use the mixie for better results. Cut the idlis into 4 – 5 pieces and pulse beat it for few seconds in mixie. The idlis will get crumbled evenly.
METHOD
Heat oil in a pan, add mustard seeds + urad dal + chana dal and let it splutter.
When dal turns golden brown, add finely chopped onions+ green chillies + ginger + curry leaves and stir fry till translucent .
Add beetroot + carrot and stir fry for a min .{ don’t make it soft , it should have the crunch ]
Adjust salt + sugar .
Add the crumbled idli and mix well.
Stir fry on medium to low flame for a min .
Garnish with coriander leaves.
Cover and off the flame
Serve with hot sambar or chutney or just plain .
Be careful while adding lemon juice while serving , sometimes idlis may be sour.
NOTES
- Instead of green chillies, you can even add red chillies.
- Refrigerating the idlis gives beautiful crumble of the idlis. More you refrigerate, easy to crumble.
- While tempering we can add cashews / peanuts for a crunch .
- Add a tsp of idli podi while crumbling the idlis to get a different flavour.
- We can add turmeric and asafoetida also .
- Veges are optional.
- We can also add boiled green peas .
