Indian bruschetta
INDIAN BRUSCHETTA
INGREDIENTS
- Baguette bread / french loaf – 1
- Finely chopped tomato – ¼ cup [ or cherry tomato ]
- Onion chopped – ¼ cup
- Cucumber chopped – ¼ cup [optional ]
- Finely chopped capsicum – ¼ cup
- Boiled corn – ¼ cup
- Butter + olive oil – 2 tsp
- Butter to toast the bread
- Finely minced garlic – 2 tsp
- Finely chopped coriander leaves – 1 or 2 tbsp
- Mixed herbs / oregano – 1 tsp
- Pepper pwdr / chilli flakes – ½ tsp or as required
- Salt to taste
- Grated cheese – 1 cube
- Lemon juice – few drops
- BBQ sauce or any sauce – 1 tsp [ optional ]
PREPARATION
- Deseed the tomatoes and cube it finely .
- Finely cube onion ,cucumber ,capsicum .
- Slice the loaf in slanting manner .
METHOD
Heat butter + oil ,add garlic and fry for few seconds .[colour should not change ]
Add onion + tomato + capsicum + corn + cucumber and stir fry for a minute. [ it should not become soft ]
Off the flame .
Add chilli flakes + mixed herbs + lemon juice + sauce + salt and mix well .
Apply butter on both the sides of bread and toast it till crispy and golden brown .
Top each slice with the vege mixture and grated cheese and serve immediately with any sauce or dips .
VARIATION
- Instead of cooking , you can just make a mixture all the ingredients and top it on the toasted bread.
- Instead of toasting we can bake it in preheat oven for 5 – 8 mins
NOTES
- You can use any toppings as per your taste – paneer / fried chicken pieces / mint leaves etc
- Adjust spices according to your taste buds .
- You can also use Indian spices.
- You can top it with any of my salad recipes given below .
- I did not add sauce.
