Instant carrot pickle without oil
INSTANT CARROT PICKLE WITHOUT OIL / ZERO OIL GAJAR KA ACHAR /SINDHI STYLE CARROT PICKLE / SANDHYAL GAJROON / PAARINYAH WARI GAJAROON JI KHATAIRIN / PAARINYAH WAARI KHATAIRN / KANJI PICKLE / AUR MEIN KHATAIRN /PAANIWALA GAJAR KA ACHAR

It’s an easy to make instant pckle without oil with less spice in just 10 to 15 mins .It is similar to kanji pickle which is made of black carrots – instead of black carrots we use red carrots which are available in winter season .
This recipe can be tried with red onions , turnips , small whole onions or chopped onions or cauliflower . [ cauliflower and turnip need to be boiled with little turmeric and salt ]
INGREDIENTS
- Red Carrot – ½ kg
- Split yellow mustard seeds OR Crushed mustard seeds – 1 tbsp
- Green Garlic chopped – ¼ cup
- Water boiled and cooled – 3 cup
- Salt – 1 tbsp or as taste
- Red Chilli Powder – 1 tbsp
- Turmeric Powder – ½ tsp

METHOD
Clean , wash and peel the carrot . Discard middle yellow part .
Cut into desired size [ long or small ]
Take all the ingredients one by one in a bowl .
Add water in the bowl.
Mix well and transfer to a sterilized air tight glass container. the water should be above the carrot level .
Keep in direct sunlight for 2 to 3 days for the pickle to mature .[ shake the bottle everyday ]
Gajar Achar is ready to be served ,whether in breakfast with parathas or lunch and dinner.
Goes well with khichdi – drizzle the water over khichdi / bhuga chawal / fried potatoes and relish it .
TIP – While making the pickle , in the end we can add 1 tsp oil + ½ tsp vinegar to avoid the pickle from getting spoilt soon .
NOTE – Make in small quantities And consume it within a week . as it becomes old the pickle becomes very sour , colour changes and the veges soften .
