Jackfruit seed stir fry recipe
JACKFRUIT SEED STIR FRY
INGREDIENTS
- Jack fruit seed – 1 cup
- Oil – ½ tbsp
- Mustard seed – 1tsp
- Fennel seeds or jeera – ½ tsp
- Onion sliced – 1
- Turmeric pwdr – 1/4 tsp
- Chilli pwdr – 1tsp or as per taste
- Garam masala – ¼ tsp
- Asafoetida – 1 pinch
- Salt as per taste
PREPARATION
Boil or pressure cook the seeds till soft not mushy. Once done remove the outer white colour cover. The brown covering inside is edible ,you can keep it or scrape it off. Slice it or chop it into small cubes or into 4 pieces.
METHOD
Heat oil in a pan.
Add mustard seeds and fennel seeds ,let it crackle.
Add onions and fry till translucent or light brown.
Lower the flame .
Add chilli pwdr + turmeric pwdr + garam masala pwdr + asafoetida and fry .
Add the cooked seeds + salt .
Mix well sprinkle few drops of water .
Cover and cook for 2 mins on low flame.
Turn off the flame .
Garnish with curry leaves or coriander leaves.
Serve as a side dish for rice., curd rice ,sambar rice and rasam rice.
NOTES
- You can give a variation by adding sambar masala instead of other masalas.
- The seeds can be had by just boiling with salt and turmeric .
- You can add it in fish gravy or mutton gravy.
- You can garnish with grated coconut.
