Jackfruit steam cake
FANAS VADI / JACKFRUIT STEAM CAKE / CHAKKA KINNATHAPPAM
INGREDIENTS
- Rice – 1 cup.
- Finely chopped ripe jackfruit – 1 1/2 OR 2 cup
- Jaggery – 1 cup or as per taste [ also depends upon the sweetness of the fruit]
- Freshly grated coconut – ¾ cup
- Cardamom pwdr – ½ tsp [optional]
PREPARATION
- Soak the rice for 5 hrs or overnight.
2. Chop the jaggery .Boil it in enough water [ water enough to cover it ] till the jaggery melts . Strain the syrup.
3. Deseed the jackfruit and finely chop it .Boil it with enough water to cover it.Cook till the jackfruit becomes very soft and mushy OR pressure cook it upto 2 whistles.
You can grind the pulp and use OR grind it with the soaked rice .
METHOD
Grind the rice + syrup + coconut + jackfruit pulp to a thick batter [ not very thin and not very thick, just like dosa batter]
*** You can add little water if required while grinding .
Grease a dhokla plate or any steel plate with oil or ghee .
Pour the batter in the greased plate and keep it for steaming.
Steam it for 12 -15 minutes or till the tooth prick comes clean.
***Steaming time depends on the quantity of the batter .
Once it cools slice it in any shapes .
EASY RECIPE TO MAKE STEAMED JACKFRUIT CAKE –
INGREDIENTS – 1 cup rice flour + 1 cup coconut milk + jaggery syrup made from 1 cup grated jaggery and 1/2 cup water [as per taste ] + 1 cup jackfruit pulp + cardamom pwdr.
Mix all the ingredients and steam it.
NOTES
- Adjust quantity of ingredients as per taste .
- Be careful with the consistency of batter .
