Kele ke phool ki sabji
KELE KE PHOOL KI SABJI [ BANANA FLOWER stir fry ]
INGREDIENTS
- Banana flower – 1
- Oil – ½ tbsp
- Mustard seeds – 1 tsp
- Curry leaves – few
- Finely chopped onion – 1
- Turmeric pwdr – ¼ tsp
- Green chilli – 2 or as per taste
- Freshly Grated coconut – ¼ cup
- Salt to taste
PREPARATION – cleaning and chopping the banana flower . [ a big task ]
- Before you start ,rub oil on your hands.
- Open each petal and remove the florets .
- Take each flower and separate the parts as shown in the image below .[ a petal with plastic texture callled the calyx and the pistil ]
- Dispose these 2 parts and collect the rest.
- In the centre you will find a cone shaped part which can be had raw or chopped together with the florets.
- As you go towards the internal part there will be no need to dispose the above parts as they will be very tender .
- Bunch the florets and chop it finely, immediately put the chopped florets in water or butter milk or it will blacken .
METHOD
Heat oil in pan ,add mustard seed and let it crackle .
Add onions + curry leaves + green chilli and fry till translucent.
Drain and add the finely chopped banana florets and mix well.
Sprinkle 1 or 2 tbsp of water, cover and cook for 5 – 6 mins on medium low flame. [ keep stirring in between so that it doesn’t get burnt ]
Once the florets gets cooked [ soft and all water evaporates ] adjust salt and mix well.
Add the coconut , mix well and stir fry for a minute. [ it should not burn at the bottom at the same time it should be fried well ]
Ready to be served as a side dish .
NOTES
- I also added ½ tsp of sambar pwdr .
- You can also add moong dal.
- This is a typical SouthIndian stir fry recipe .
