Ladies finger poriyal recipe
LADIES FINGER STIR FRY [ South Indian style ]
INGREDIENTS
- Ladies finger – 250 gms
- Onion finely chopped – 1 big
- Green chilli chopped – 3 or as per taste
- Oil – 2 tbsp
- Mustard seeds – 1 tsp
- Curry leaves – few
- Turmeric pwdr – ¼ tsp [ optional ]
- Coconut freshly grated – 3 tbsp
- Salt as per taste
PREPARATION
Method clean ,wash and pat dry the ladies finger and chop into desired size.
METHOD
Heat oil in a pan ,add mustard seeds and let it splutter.
Add onions + curry leaves + green chilli and fry till translucent.
Add ladies finger and stir fry on medium flame for few minutes.
The ladies finger will become sticky , continue stirring .
Fry till the ladies finger shrink , become soft + non sticky.
Add salt and turmeric pwdr mix well.
Once done , add the coconut and mix well and off the flame .
Serve as side dish for chapatti or rice.
NOTES.
- Don’t chop the ladies finger finely or it will become very sticky while cooking.
- I have added more oil you can reduce it .
- You can drizzle few drops of lemon juice towards the end.
- Give a twist by adding 1 tsp sambar pwdr.
- I have not added turmeric pwdr.
- Buy tender ladies finger.
- It takes around 15 – 20 mins to cook.
- There should be no moisture in the ladies finger while cooking.
- Heard somewhere to microwave it to avoid stickiness ,but not tried.
- Also adding a tsp of lemon juice or curd helps in reduce the stickiness.
