LASANIYA SEV MAMRA

Mamra is Gujarati word of puffed rice. It is also known as murmura or kurmure.
This is Gujarati style of making spicy puffed rice
NOTE – The authentic lasaniya sev recipe asks for deep frying the mamra. But you can just roast it in less oil .
INGREDIENTS
- Mamra – 250 GRMS
- 5 – 6 tbsp gujarati garlic chutney. RECIPE – KATHIYAWADI GARLIC CHUTNEY
- Red chilli pwdr – 2 or 3 tbsp
- Salt to taste
- Plain sev – 100 grms
- Fried peanuts – ½ cup [ optional ]
- Oil to deep fry
NOTE – the puffed rice has to be fresh and crisp .
METHOD
Heat oil in a deep pan.
Take mumra in a big steel strainer.
Once the oil becomes hot .
Dip the strainer in the hot oil.
Stir and fry for just 30 seconds .
Drain off the oil completely .
Don’t worry the puffed rice will not absorb any oil.
Repeat the process with the whole pkt .
Transfer the fried puff to a big plate .
Sprinkle salt . [ remember the chutney also has salt ]
Add the fine sev all over .
Add the garlic chutney and mix well
Finally add the peanuts and give a mix.
let it cool down completely then serve in an individual bowl.
Once it gets cool down, you can store them in airtight container as well. It stays good for weeks in airtight container.
