MENTHI VANKAYA RECIPE
MENTHI VANKAYA RECIPE [ Andhra Style Fenugreek Spiced Baingan ]

Methi Vangaya is a stuffed baingan sabzi where brinjal is stuffed with spice powders and then fried until it becomes soft and crispy. Serve this delicious Baingan Ki Sabzi along with Sambar and Steamed Rice.
INGREDIENTS
- Baby brinjal – 500 grms
- Oil – 2 or 3 tbsp
- Turmeric – ¼ tsp
- Menthe karam masala pwdr – 2 tsp
- Salt to taste

METHOD
Take small brinjals, cut it into four pieces lengthwise.
Heat oil in a pan, add brinjals and fry on high flame for few minutes.
Now lower the flame and add haldi and salt to taste and stir it gently.
Cook till 80 percent done.
Add 2 teaspoons menthi kharam and mix well.
Cover it and cook on slow flame till completely done.
You can add little chilli powder if needed.
Don’t make it mushy, it should be fried well at the same time it should be firm too, ( different variety of brinjals take different time to cook ]
Same recipe can be tried with Bhindi, baigan, suran, parval even aloo.
