MOLGAPODI IDLI / PODI IDLI 

INGREDIENTS

  • Idlis – 4
  • Molgapodi / gunpowder – 2 tbsp or more or as required [ more the better ]
  • Red chilli pwdr – as required
  • Ghee – as required
  • Sesame oil [ gingelly Oil ] – as required
  • Salt to taste

PREARATION

  1. Make idlis referring to the recipe here – Batter for soft idlis
  2. Prepare molgapodi referring to this recipe – Molgapodi
  3. Make a mixture of red chilli pwdr + salt .

METHOD

Apply ghee + oil all over the idlis generously .

Rub molgapodi all over the idlis generously .

Rub the red chilli pwdr + salt mixture all over as per taste.

*** you can serve at this stage without frying .

OR

Rub little ghee and sesame oil on a frying pan .

Place in the masala idlis and fry on both sides for a minute or two on medium low flame.

Frying it , gives a crispy / crunchy outer texture.

Serve hot with any South Indian accompaniments like sambar /chutney .

VARIATION – Make a mixture of molgapodi + chilli podi + salt + ghee + sesame oil .Mix well . Apply all over the idlis and serve .

NOTES

  1. I had these idlis in Murgan idli shop in Chennai ,it was yum but too much of oil and ghee .I have reduced oil and ghee..Thats the reason I am not able to tell you the quantity of oil and ghee .Adjust accordingly and enjoy.
  2. Instead of using oil and ghee , you can use any one of these .
  3. Be careful while adding chilli pwdr as molgapodi also has chilli .
  4. Use Kashmiri chilli pwdr for more colour.
  5. Instead of frying you can also temper it with mustards seeds + urad dal + curry leaves ,mix well and serve .
  6. You can also use leftover idlis .
