Okra peanut fry
LADIES FINGER PEANUT FRY / OKRA PEANUT FRY / PEANUT BHINDI FRY / MOONGPHALI BHINDI
INGREDIENTS
- Ladies finger – 250 grms
- Oil – 1 tbsp
- Chilli pwdr – 1 ½ tsp or as taste
- Coriander pwdr – 1 tsp
- Jeera pwdr – ½ tsp
- Turmeric – ½ tsp
- Sugar – ½ tsp
- Roasted sesame peanut pwdr – 4 or 5 tbsp
- Lemon juice – 2 or 3 tsp or as required
- Finely chopped coriander leaves for garnish
PREPARATION
Wash, pat dry the ladies finger ,cut both the ends and chop it as per the size you want.
**** TIP – after chopping spread it on a plate or cloth ,and keep it open under fan or sunlight for min 30 mins or more – helps in avoiding stickiness while cooking.
Take all spice pwdr in a bowl .
METHOD
Heat oil in a pan add the spice pwdr and mix.
Be quick and add the ladies finger ,mix well .
Stir and fry for 10 mins till it softens .
Add salt + sugar and mix well .
Add the peanut pwdr and mix well.
Again stir fry for 2 mins till the ladies finger is well coated with the peanut pwdr .
**Cooking time depend on the size of the peanut .
NOTES
- Never cover and cook the bhindi .
- Always cook on high flame .
