Pizza Base without Yeast
While yeast provides nice flavor it is not a must to create a beautiful homemade pizza. The dough’s raising agent is baking powder, which activates once you add the water, so there is no waiting around for proofing dough. It can be made and the whole pizza can be baked in a fraction of the time it takes to make yeasted pizza dough.
INGREDIENTS
- Maida – 1 Cup
- Curd – ½ Cup
- Baking Soda – ½ Tsp
- Baking Powder – ½ Tsp
- Salt – To Taste
- Olive Oil – 1½ Tbsp
- Corn meal / Makai ka atta or maida – For Dusting
PREPARATION
Preheat oven at 180 * C
METHOD
Take maida + salt + baking soda + baking powder
Mix well and add curd and start mixing .
Knead into a sticky soft dough.
Knead well . [ it is important to knead the dough well ]
Add oil and knead for a minute.
Divide the dough into 2 portion for regular pizza or 3 portion for small pizzas .
Roll each portion into a circle either thick or thin by dusting dry flour .
Thick ones will be soft base and thin ones will be crusty .
Grease or lay a butter paper in a baking tin .
Sprinkle some flour.
Transfer the base in the baking tin .
Prick some holes , using a fork
Bake in preheated oven for 12 to 15 mins till the base is done .

NOTE
This dough can be covered and stored in an airtight container in the fridge or wrapped tightly in plastic wrap. So that no air gets to the dough as this can change its texture and flavor.
