Kumri / kumro bora is a popular benagali snack and also a street side food .

In addition to beta carotene, pumpkins offer vitamin C, vitamin E, iron, and folate — all of which strengthen your immune system. More pumpkin in your diet can help your immune cells work better to ward off germs and speed healing when you get a wound. It’s high in vitamin C and beta carotene. Pumpkins are also high in lutein and zeaxanthin, substances that may help prevent the formation of cataracts and reduce the risk of macular degeneration.

Pumpkin fritters / pumpkin batter fried / crispy kumri / kumro bora

INGREDIENTS

  • Pumkin peeled and thinly sliced – ½ kg [ avoid matured ones – make long slices ]
  • Besan – 1 cup
  • Salt
  • Sugar ½ tsp
  • Turmeric – ¼ tsp
  • Chilli pwdr – 1 tsp
  • Kalonji / ajwain – ½ tsp
  • Rice flour – ¼ cup [ homemade rice flour preferred ]
  • Water
  • Baking soda – ¼ tsp
  • Adjust water and make a thick batter
  • Oil – to deep fry
  • Very hot oil – 1 tbsp for batter

METHOD

Peel and slice the pumpkin in long thin slices .Dip in salt water and keep aside .

Make a batter from besan , salt , turmeric chilli pwdr and kalonji .

Cover and keep the batter aside for 15 mins .

After 15 mins add the rice flour + baking soda and mix well .

Adjust water and make a thick batter

Now very important step beat the batter for 3 to 5 mins with hand or use a beater and beat for 2 mins .

The colour and texture of batter will change.

The batter becomes very smooth .

Add 1 tbsp hot oil and give a mix .

The batter should not be very thjick or thin , adjust water accordingly . [ dropping consistency ]

Heat oil in a deep pan .

Once the oil is hot .

Wipe the pumpkin slices on kitchen towel , drop the pumpkin slices in batter and coat it well with batter .

Slide it in hot oil .

Turn the flame to medium low .

Cook on medium flame till golden and crisp on both sides.

Once done remove and serve hot .

Similar recipe can be tried with pumkin flour or doodhi also .
