RAGDA PATTIES RECIPE
HOW TO MAKE THE PATTIES
INGREDIENTS
- Potates – 5 medium size
- Corn flour – 3 tbsp
- Salt as per taste
- Chilli pwdr – 1/2 tsp
- Oil for shallow fry
METHOD
Pressure cook the potatoes till soft .
Peel and mash it well when it is warm.
Mix in the corn flour + salt + chilli pwdr.
Knead it into a soft dough.
Make small balls of the mixture .
Flatten it into round patties shape.
Shallow fry the tikkis on both sides till golden brown on both the sides on medium flame.[ press lightly while frying]
HOW TO MAKE RAGDA
INGREDIENTS
- White vatana / White dried peas – 1 cup
- Turmeric pwdr – 1/4 tsp
- Salt
- Asafoetida – ½ tsp
PREPARATION – Soak the vatana over night . [9 hrs]
METHOD
Pressure cook the soaked vatana with salt turmeric and asafeotida till they become soft and mushy.
It should be watery,as it thickens when it cools down

- Patties

- Imli chutney – https://maryzkitchen.com/imli-ki-chutney/
- Finely chopped coriander leaves
- Chaat masala
- Nylon sev
- Finely chopped onion
- Amchur pwdr optional
METHOD
Take 2 patties in a plate .
Pour the ragda over to cover it.
Pour some green chutney + sweet chutney + onions + coriander leaves.
Sprinkle some chaat masala and amchur pwdr.
Your khatta meetha teekha chatpatta ragda patties is ready to gulp.
NOTES
- The ragda should be little watery as it thickens when it cools down.
- While making patties instead of corn flour you can either add bread or bread crumbs or arrowroot pwdr.
- While assembling you can also add curd ,finely chopped tomatoes .
