INGREDIENTS
- Raw banana – 2
- Onion finely chopped – 1
- Freshly grated coconut – ¼ cup
- Turmeric – ¼ tsp [ optional ]
- Salt to taste
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Red chilli – 2 or 3 or as per taste
- Curry leaves – few
METHOD
Peel off the skin of raw banana and cut them into bite sized pieces. After cutting , immediately keep it immersed in water to avoid it from changing its colour.
Take water ( water just till immersing level) + little salt + turmeric powder.
*Add water till banana immersing level while cooking , so that excess water with nutrients is not drained .
Cook until the banana turns soft not mushy [ 8 to 10 mins on medium flame ].
Don’t over cook , it should be soft but hold its shape
Drain the water , cover and keep aside .
Heat oil in a pan , add mustard seeds and let it splutter.
Add red chilli + curry leaves and give a stir .
Then add onion and saute till translucent.
Add cooked banana + required salt and give a stir.
Cover and cook for 2mins on low flame .Stir in between .
Add coconut , give a quick stir and switch off. No need to cook after adding coconut .
Serve with rice and any gravy like dal , sambar , tamarind curry of your choice.
