Sambar made with freshly ground masala
ARAICHU VITTA SAMBAR / SAMBAR MADE WITH FRESHLY GROUNDED MASALA
INGREDIENTS
· tuvar dal – ¼ cup
· turmeric pwdr – ¼ tsp
· tamarind – small gooseberry size
· cooked veges – 1 cup [pumpkin ,drumstick ,carrot , cucumber etc]
· salt as per taste
FOR GRINDING
· coriander seeds – 1 tbsp
· chana dal – 1 tbsp.
· red chilli – 6 or as per taste
· fenugreek seeds – ½ tsp
· grated coconut – 2 tbsp
· urad dal – 1 tsp
FOR TEMPERING
· oil – ½ tbsp.
· mustard seeds – 1 tsp
· small onion [shallots] – 7 chopped
· asafoetida – a pinch
· curry leaves – few
· finely chopped coriander leaves for garnishing
PREPARATION
1. Pressure cook the dal with turmeric and salt till soft .mash and keep it aside
2. Soak the tamarind in hot water and extract the juice [1 ½ cup ]
3. Cook the veges .
4. Roast each of the ingredient under grinding one by one on low flame until golden brown.you can use little oil for roasting .i didn’t. Allow it to cool .grind it into pwdr or smooth paste.
METHOD
Heat oil in a pan .
Add the mustard seeds and allow it to crackle.
Add onion + curry leaves + asafoetida and saute for few minutes.
Add the tamarind juice and boil till raw smell leaves.
Add the grounded pwdr + cooked veges + cooked dal + 1 cup water.
Adjust salt .
Mix well and allow it to boil for 5 mins on medium flame. [it should not be very thin or thick ,so adjust water accordingly ]
Garnish with coriander leaves .
Serve with any south indian dish or plain rice.
NOTES
- Instead of adding the grounded masala with the dal and veges ,add it after adding the onion and also saute the grounded masala for more flavor
- You can also add 1 tsp of sambar pwdr.
- The grounded masala can be fine or coarse in texture.
- You can omit the veges.
