Suran ki sabji
SURAN KI SABJI
INGREDIENTS
- Yam / suran – 200 gms
- Onion finely chopped – 1
- Tomato finely chopped -1
- Red chilli pwdr – 1 tsp or as per taste [ I added less as sambar pwdr also has chilli ]
- Turmeric pwdr -1/4 tsp
- Coriander pwdr – 2 tsp
- Sambar pwdr – 1 tsp [ optional but adds lot of flavour]
- Oil – 1 tbsp
- Fennel seeds – 1 tsp
- Fenugreek seeds / methi – ½ tsp
- Mustard seeds – 1 tsp
- Red chilli – 2 broken
- Tamarind – goose berry or small lemon size soaked in hot water.
- Curry leaves – few
- Salt to taste
PREPARATION
- Chop the yam thinly length wise .[thin so that it cooks fast]
- Extract juice from the soaked tamarind.
METHOD
Heat oil in a pan, add mustard seeds and let it crackle .
Add fennel seeds + methi seeds + red chilli and fry for few secs ,[don’t burn ]
Add onions and fry till light brown .
Add tomatoes and fry till oil separates and toamtoes become mushy.
Add chilli pwdr + coriander pwdr + turmeric + sambar pwdr + salt.
Mix well and fry till raw smell leaves.
Add the tamarind extract and cook for some time till raw smell of tamarind leaves .
Add the yam ,and mix well .
Add ½ cup water ,cover and cook till the yam becomes soft .[ don’t over cook the yam should be whole and soft ]
The gravy should be of thick consistency.
Once done off the flame and serve as a side dish .
NOTES
- You can also add a small piece of jaggery.
