Aloo gobi matar ki sabji

INGREDIENTS

  • Cauliflower florets – 250 gms
  • Potato – 1 big
  • Green peas – ½ cup
  • Onion – 1 chopped
  • Tomato – 1 chopped
  • Ginger garlic paste -1 tsp
  • Jeera – 1 tsp
  • Chilli pwdr – 1 tsp
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr – 2 tsp
  • Garam masala pwdr – ½ tsp OR KITCHEN KING MASALA – 1 TSP
  • Oil + ghee – 1 tbsp
  • Salt as per taste
  • Sugar – ¼ tsp
  • Finely chopped coriander leaves for garnish

PREPARATION

  1. Soak the cauliflower florets in turmeric + salt + water .
  2. I have chopped the potato into small cubes to reduce cooking time.

METHOD

Heat oil + ghee in a pan.

Add jeera and let it crackle.

Add onion and fry till translucent.

Add asafoetida.

Add ginger garlic paste and fry till raw smell leaves.

Add tomato and fry till oil separates,

Add chilli pwdr + turmeric pwdr + coriander pwdr + garam masala pwdr and fry .

Add potato + green peas, mix well.

Add little water ,cover and cook for 2 minutes.

Add cauliflower and mix well.

Sprinkle little water if required  , again cover and cook till the veges soften.

Adjust salt + sugar.

Mix well and off  the flame.

Garnish with finely chopped coriander leaves.

Serve as side dish.

NOTES.

  1. Quantity of veges and spices can be adjusted as per taste.
  2. Instead of tomato you can add amchur pwdr.
  3. You can also add crushed kasoori methi leaves or pwdr.
  4. You can garnish with fresh cream.
  5. Why not sprinkle little chaat masala towards the end.
  6. You can add green chillies and reduce red chilli pwdr.
  7. Don’t over cook the veges.
  8. Why not give a twist by adding ready made biryani masala and if sabji remains you can just mix it with cooked basmati rice.
  9. You can also try with sambar masala pwdr.
  10. You can cook or fry the veges before adding.
  11. You can omit tomato.
