Crispy onion pakoras recipe

                                                                   CRISPY ONION PAKORA / ONION FRITTERS

Kanda bhajiya

Kanda bhaji are crisp and crunchy fried fritters made mainly with onions and gram flour. A popular street food snack from maharashtra. a fried snack or deep fried onion fritters prepared with chickpea and rice flour coating with other spices. pakora recipe is a common snack recipe prepared across all states of india and is typically known with local names. in kannada it is known as eerulli baje, kanda bhaji in marathi and vengaya pakoda in tamil.

INGREDIENTS

  • Onion finely sliced and layers separated – 2 or 3 big
  • Besan – 1 or 1 ½ cup approximately
  • Ginger paste – 1 tsp
  • Rice flour / corn flour – 2 tbsp for crispiness
  • Ajwain – ½ tsp
  • Red chilli pwdr – 1 tsp
  • Finely chopped coriander leaves – 2 tbsp or more
  • Salt as per taste
  • Oil for deep frying

METHOD

Take the chopped onion in a big plate, sprinkle salt evenly over it .

Squeeze the onions well with clean hands and keep aside for 5 mins to allow it to sweat. [leave water]

Now add the other ingredients except the besan and mix well.

Now add the besan little by little and mix well  till the onions are well coated with the flour .

Knead it like a dough.

Don’t add water , just sprinkle few drops if required  or wet your hands and mix well.

The dough should be tight and not loose or watery.

Heat oil in a deep pan .

When the oil is hot start dropping the mixture in small batches. [just don’t drop try to spread the mixture with fingers while droping]

Fry on both the sides till golden brown.[don’t burn it]

Once done , remove on absorbent paper.

Serve hot with green chutney + sweet chutney.

NOTES

  1. The water oozed out of the onion is enough to bind the mixture.
  2. Avoid adding water for crispier pakoras.
  3. Instead of red chilli pwdr you can add green chillies.
  4. You can add curry leaves.
  5. For more flavour you can add crushed fennels seeds.
  6. You can even add roasted and crushed whole coriander seeds.
  7. Instead of coriander leaves for variation you can try mint leaves.
  8. The same recipe can be tried with grated  beetroot, cabbage or carrot.
