SEV KI BHAJI

INGREDIENTS

  • Sev – 1 or 1 ½ cup [ any type – thick ,thin ,spicy ]
  • Freshly grated coconut – ¼ cup
  • Onion chopped – 1 small
  • Tomato chopped – 1 small
  • Ginger garlic paste – 1 tsp
  • Red chilli pwdr – 1 ½ tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Coriander pwdr – 2 tsp
  • Garam masala – ½ tsp
  • Jeera – 1 tsp
  • Curry leaves – few
  • Oil – 1 tbsp
  • Salt as per taste
  • Finely chopped coriander leaves for garnish

PREPARATION

Dry roast the coconut in a pan till golden brown in colour. Add onion and roast for 2 minutes. Add tomatoes and roast for 2 mins. Add ginger garlic paste and roast for 1 min. Add chilli pwdr + turmeric + coriander pwdr + garam masala pwdr  and roast for a min .

Grind it into a fine paste by adding little water

METHOD

Heat oil in a pan , add jeera + curry leaves and allow it to splutter.

Add the grounded paste and stir fry for 2 mins.

Adjust  salt .

Add water as per the consistency you want .

Allow it to boil for sometime .

Once desired consistency is achieved ,off the flame and garnish with coriander leaves .

Sev has to be added only while serving else it will become soft .

Serve with phulkas or rice .

VARIATION

  1. We can make this recipe by just making a simple onion tomato base .Refer here –  Indian bhuna masala recipe
  2. Some make fresh sev while cooking .First make the dough for sev – besan + chilli pwdr + turmeric + salt with little water . Once the gravy starts boiling ,press the dough through the chakli press directly into the gravy and allow it to cook for few minutes .[ Here we are not frying the sev ]
