LEFTOVER CHAPATI NOODLES EGG BURJI
INGREDIENTS
- Small chapatti / phulkas – 4
- Egg – 4
- Milk / water– 2 tbsp
- Oil – 2 tbsp
- Onion finely chopped or sliced – 1
- Tomato finely chopped – 2
- Jeera – 1/2 tsp [optional ]
- Finely chopped green chilli – 1
- Ginger garlic paste – 1 tsp
- Red chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 1 tsp [ optional ]
- Garam masala pwdr – ½ tsp OR Pav bhaji masala – 1 ½ tsp
- Tomato ketchup – 1 tsp [ optional ]
- Salt as per taste
- Finely chopped coriander leaves – 2 tbsp
PREPARATION
- Roll all the 4 chapatis together as shown in pic .Now slice it very finely with a sharp knife .[ I sliced it very finely ]
- Break the eggs into a bowl , add milk and whisk well and keep aside .

Heat oil in a pan.
add jeera and let it crackle .
Add onions + green chilli and fry till translucent.
Add ginger garlic paste and stir fry till raw smell leaves .
Add tomatoes + salt and fry till oil separates.
Add chilli pwdr + coriander pwdr + turmeric pwdr + garam masala pwdr + salt and fry till raw smell leaves.
add ketchup and give a nice mix .
Lower the flame and slowly add the whisked egg , keep stirring while adding.
Cook on low flame by continuously stirring till the eggs are cooked and firm .
Don’t over cook else it will become very dry .There should be some moisture .
Add the chopped chapatti and mix well till it is coated with the masala .
Once done garnish with coriander leaves and serve hot .
NOTES.
- Adjust masalas as per your taste.
- I have added pav bhaji masala for more flavour.
- Stirring continuously is important.
- The same procedure can be done with chopped boiled eggs ,it taste much better because of the cooked yolk .It has a very smooth texture. – Boiled egg burji
- Why not give a twist by adding capsicum + butter.
- In the same bhurji you can add cooked rice instead of chapatti and have egg fried rice.
- With the onions you can also add mushrooms.
- You can add curry leaves for more flavour .
