Cauliflower soup recipe

                                                    CAULIFLOWER SOUP

INGREDIENTS

  • Cauliflower florets – 2 cup
  • Butter + olive oil – 2 tsp
  • Onion sliced – 1
  • Garlic chopped – 3
  • Vegetable stock or water – 1 ½ cup [ use maggi cubes]
  • Milk – 1 cup
  • Pepper pwdr or chilli flakes – as required
  • Mixed herbs or oregano – ¼ tsp
  • Salt as per taste

PREPARATION

Clean ,cut the cauliflower and soak it in salty water for sometime. Drain ,  wash , rinse and keep aside.

METHOD

Heat oil + butter in a pan , add onion + garlic and fry till light brown .

Add the cauliflower and fry for 2 mins by stirring.

Add water or stock + salt and cook on low flame till cauliflower becomes soft.

Off the flame and allow it to cool.

Grind this into a fine puree .

Strain the puree .[optional ]

Take the puree in a pan ,add milk to it and boil for 3- 4 minutes.

Off the flame and add pepper pwdr / chilli flakes and herbs /oregano.

Mix well and serve hot with any toasted bread.

NOTES .

  1. We can use coconut milk.
  2. You can also use very small piece of ginger.
  3. You can use veg or non veg maggi magic cubes.
  4. If using maggi cubes be careful while adding salt.
  5. For rich taste you can add 1 tbsp of cream.
