Palak rice/Spinach rice recipe
PALAK /SPINACH RICE RECIPE
Ingredients
- Cooked basmati rice -2 cup
- Palak puree- 3/4 cup
- Onion-1 finely sliced
- Ginger, garlic and green chilli paste-2 tsp
- Salt as per taste
- Ghee -1/2 tbsp
- Oil-1/2 tbsp
- Few whole garam masala[cardamom,clove,bayleaf,cinnamom]
- Fried nuts for garnishing
PREPARATION-
- Rinse rice in water for 3-4 times. Soak it for 20-30 mins. Cook it with salt. [don’t overcook it , it should be grainy ]
- Boil the palak/spinach leaves in hot water for 3 or 4 mins.Drain and blend it.
METHOD
Heat ghee+oil in a pan
Add the whole garam masala and let it splutter,
Add the onions and fry till translucent.
Add the ginger, garlic and chilly paste and fry.
Add the palak puree and mix well.
Adjust salt and cook for 1 min.
Add the rice and mix well till all the rice gets coated with the masala.
Cook for 2 mins.
Garnish with fried nuts like cashew,badam or even kismis.
Serve it hot with raita ,papad or omelette.
Notes
- Instead of puree you can use finely chooped palak.
- You can add boiled corn,potato ,green peas, kabuli chana or fried paneer.
- You can also add finely chopped coriander or mint leaves to give a variation.
