Aloo palak gravy
ALOO PALAK GRAVY
Aloo palak recipe | Aloo palak sabzi | Indian spinach potato recipe · Aloo palak can be made to a gravy or dry dish. Aloo palak recipe – very delicious and mild flavored Indian curry/gravy recipe made with boiled potatoes and spinach
INGREDIENTS
⦁ Spinach /palak – 1 bunch
⦁ Boiled potato cubes – 2 medium size [ don ‘t overcook it ]
⦁ Oil – 2 tsp
⦁ Onion roughly chopped – 1
⦁ Tomato roughly chopped – 1
⦁ Ginger garlic paste – 2 tsp
⦁ Green chilli – 4 or 5 or as per taste
⦁ Kasoori methi leaves– 1 tbsp
⦁ Coriander pwdr – 1 tsp
⦁ Garam masala pwdr – ½ tsp OR kitchen king masala – 1 tsp
⦁ Turmeric pwdr – a generous pinch
⦁ Sugar – ½ or 1 tsp
⦁ Salt to taste
⦁ Butter/ghee – 2 tbsp
⦁ Fresh cream – 1 or 2 tbsp [optional ]
PREPARATION
- Clean ,wash and rinse and soak the palak leaves for sometimes . Again rinse and drain the excess water .Transfer it to a colander for excess water to drain off .Chop it roughly .
- Heat 2 tsp oil , add onion and fry till transparent .
- Add ginger garlic paste + green chilli and fry till raw smell leaves .
- Add the chopped tomato + salt and fry till it softens.
- Add coriander pwdr + garam masala pwdr + sugar + turmeric and fry for few seconds .
- Add coriander and mix well .
- Add palak and fry till it reduces completely .
- Allow the mixture to cool.
- Transfer this mixture to a mixie jar and blend it into a smooth mixture .Keep aside .

Heat 2 tbsp butter in a pan .
Add the palak puree and mix well.
Add kasoori methi pwdr .
Adjust 1/4 cup water / milk if required.[ the gravy has to be thick ]
Add the potato cubes and mix
Simmer on low flame for a minute and off the flame .
Serve hot as side dish for rice or any Indian breads.
NOTES
- Instead tomato , u can use 3 tbsp of curd .
- Instead of potato cubes ,u can add fried mixed veges /paneer /boiled chole .
- It is a must try gravy .
- With the palak we can also saute 1/2 cup coriander leaves for different flavour.
- Even non vegetarians can try this gravy by adding small pieces of fried / boiled chicken.
