Authentic chicken ghee roast
AUTHENTIC CHICKEN GHEE ROAST
INGREDIENTS
- Chicken with bones – 1 kg
- Curd – ¼ cup
- Ginger garlic paste – 1 tbsp
- Coriander seeds – 1 tbsp
- Cinnamon – 1 small piece
- Cloves – 4
- Cardamom – 2
- Kashmiri chill – 8
- Whole red spicy chilli – 6 or as required
- Jeera – 1 tsp
- Fennel seeds – 1 tsp
- Pepper corns – 1 tsp
- Turmeric pwdr – ½ tsp
- Lemon juice – 1 tbsp
- Ghee – 3 or 4 tbsp
- Curry leaves for garnish
- Salt to taste
PREPARATION
Clean ,wash and cut the chicken into desired size.
Marinate it with curd + salt + turmeric + ginger garlic paste for minimum ½ an hr or more or overnight. [more the margination better the absorption]
METHOD
Dry roast the red chillies, remove and keep aside .
Now dry roast other spices one by one – black pepper + jeera + fennel seeds + cloves + cinnamon + cardamom .[ don’t burn it ]
Now make a fine pwdr of roasted red chilli + roasted spices by grinding.
Add the spice pwdr + lemon juice + salt to the marinated chicken and mix well.
Heat ghee in a heavy bottom pan.
Add the chicken and mix well .
Cover and cook it for 5 minutes till it completely sweats.[ leaves water ]
Open the lid and mix it.
Now stir fry and cook till the chicken is completely cooked and water is absorbed on medium flame.
Garnish with curry leaves
Serve hot as side dish.
SIMPLE VARIATION
Marinate chicken with curd + ginger garlic paste + garam masala pwdr + coriander pwdr + regular chilli pwdr + kashmiri red chilli pwdr + turmeric + salt + lemon juice etc and cook it in ghee till it done .
NOTES
- It is a Mangalorean recipe where we also add a small piece of tamarind + small piece of jaggery or sugar + ½ tsp fenugreek seeds.
- Adjust red chilli as per your taste.
- Kashmiri red whole chilli is must for the beautiful bright coclour of the recipe.
- Same recipes goes for mutton ghee roast but use pressure cooked mutton or tenderize the mutton with raw papaya paste.
- The authentic recipe is very spicy.
