Beetroot stir fry recipe
BEETROOT STIR FRY
INGREDIENTS
- Beetroot – 1 big
- Oil – ½ tbsp
- Mustard seed – ½ tsp
- Onion finely chopped – 1
- Green chilli – 2 chopped or as per taste
- Curry leaves – few
- Freshly grated coconut – 2 or 3tbsp
- Coriander pwdr or sambar pwdr – 1 tsp ( optional )
- Salt as per taste
PREPARATION
Peel the beetroot and grate it .Squeeze the excess juice from it.Keep aside. Don’t throw the juice use it for some other purpose.
METHOD
Heat oil in a pan.
Add mustard seeds and let it crackle .
Add curry leaves + onion + chilli and fry till onions turn translucent.
Add the grated beetroot + salt and mix well.
Stir fry for 2 minutes.[it should not get overcooked it should have a crunchy texture]
Garnish with coconut and mix well .
Add the sambar or coriander pwdr amd mix well.( optional )
Off the flame.
Serve as side dish.
NOTES
- You can also chop the beetroot instead of grating.
- You can also first boil the beet ,then peel and chop it and later temper it.
- Instead of green chilli you can add sambar pwdr.
- With mustard seeds you can add little urad dal.
- Doesn’t take much time to cook as it is grated.
