Bengali chingri malai curry / prawns cooked in coconut milk .

Chingri malai curry also known as prawn malai curry, is a Bengali curry made from prawns and coconut milk and flavoured with spices. The dish is popular throughout Bengal and is served during weddings and celebrations, or for guests, and was also very popular among the British in Calcutta.

The main ingredients are prawns and coconut milk, along with ghee or mustard oil, onions, turmeric powder, chopped green chilli, garlic paste, and ginger paste flavoured with spices.

INGREDIENTS

  • ½ kg big prawns
  • oil /ghee – 2 or 3 tbsp
  • onion finely chopped – 1
  • slit green chilli – 1 or 2
  • bay leaf – red chilli – 1
  • cardamom – 2
  • cinnamon – small piece
  • clove – 2
  • 2 tsp ginger paste or grated
  • ¼ tsp turmeric
  • 1 tsp kashmiri red chilli powder
  • 2 tbsp beaten curd
  • green chillies 2 or 3
  • thick coconut milk (first-press) – ½ cup
  • thin coconut milk (second-press) – 1 cup
  • salt
  • 1 tsp sugar
  •  garam masala – ¼ tsp

METHOD

Shell and devein the prawns .Clean , wash and rinse well .Drain off the excess water .Apply little salt and turmeric and keep aside .

Mix the curd + red chilli + turmeric and keep aside

Extract the thick and thin coconut milk – Recipe –

Heat oil /ghee  in a pan.

Add dried red chillies, bay leaf, cardamom, cloves, and cinnamon and stir fry for few seconds.

Add onion + green chilli and stir fry till light brown .

Add ginger paste and fry till raw smell leaves .

Add curd + turmeric + red chilli paste and and give a stir .

Stir fry till oil separates .

Add the prawns and give a mix.

Stir fry for 2 mins .

Add the thin coconut milk and mix well .

Bring it to a boil .Let it cook for 6 to 7 mins.

Finally add the thick coconut milk and give a mix .

Just before it starts boiling off the flame .

Sprinkle garam masala, give a mix  and cover

serve with mishit pulao or plain steamed rice .
