Cabbage soup
CABBAGE SOUP / CREAM OF CABBAGE
INGREDIENTS
- Roughly chopped cabbage – 2 cup
- Onion sliced – 1 small
- Garlic – 3 clove minced
- Cinnamon – a very small piece
- Clove – 1
- Bayleaf – 1
- Butter – 2 1tbsp
- Pepper pwdr as required
- Plain water – 2 cups
- Stock / water – 1 cup [ for stock use maggi magic cubes ]
- Salt to taste
- Coriander leaves finely chopped to garnish [optional ]
- Cornflour slurry – 1/2 cup water mixed with 2 tsp cornflour [optional ]
- Grated cheese – 1 cube [ optional ]
- Fresh cream – 1 tbsp [optional – if you want creamy soup
METHOD
Heat butter in a cooker , add cinnamon + clove + bayleaf .
Add garlic and fry for few seconds.
Add onion and fry till golden brown .
Add the cabbage and mix .[ no need to fry ]
Add 2 cup of water + salt and pressure cook upto 2 whistles.
Allow it to cool .
Strain out the cinnamon + clove + bayleaf and discard .
Blend it into a fine paste.
Add the stock and mix well .
Adjust salt and pepper .
Heat another pan ,add the cabbage soup and bring to a boil .
Plain cabbage soup is ready to serve .[ here to thicken the soup you can also add mashed potato ]
***Now to make it rich and creamy ,add the fresh cream and mix well .
VARIATION – Add 1 tbsp fresh cream + grated cheese + mixed herbs mix well .Cream of cabbage is ready to serve .
****Garnish the soup with coriander leaves for more flavour .
Serve hot with toasted bread /bread sticks .
NOTES
- Add water as per the consistency you want .
- Stock can be made at home by boiling diffenet veges OR just use a maggi stock cube .
