    SIMPLE POTATO / ALOO FRY

INGREDIENTS

  • Potato – 3
  • Onion – 1 big sliced thinly
  • Oil – ½ tbsp or more
  • Curry leaves – few
  • Red chilli pwdr – 2 tsp or as per taste
  • Turmeric pwdr – ¼ tsp
  • Asafoetida – a pinch
  • Finely chopped coriander leaves to garnish
  • Salt to taste

PREPARATION

  1. Peel the potato ,dice it or cut it length wise .[ medium size ]
  2. Boil it in water till it is ¾th cooked. [don’t over cook ]
  3. Drain the water and keep aside .

METHOD

Heat oil in a pan add jeera let it splutter .

Add onions + curry leaves and fry till light brown .

Lower the flame and add chilli pwdr + turmeric + asafoetida + salt and fry .

Add the cooked potatoes and mix well.

Stir fry the potatoes till it is fully cooked. [ the knife should easily slide inside the potatoes with out breaking it.]

Once done off the flame .

Ready to serve as side dish .

NOTES

  1. I have not pressured cooked the poatato as I want the potatoes to be in shape.
  2. Also don’t over cook it while boiling else it will break while frying it with the masalas.
  3. Variation – u can add sambar pwdr / garam masala pwdr .
  4. Y not sprinkle little kasoori methi pwdrin the end.
  5. You can add pepper pwdr for more spiciness .
