CHATPATTA BHARWA KARELA / STUFFED KARELA
Your diet plan is incomplete without bitter gourd (commonly known in Hindi as karela). It boosts weight loss and helps in controlling diabetes.
Bitter gourd is a rich source of vitamins and minerals. It contains iron, magnesium, potassium and vitamins like A and C. It contains twice the calcium of spinach and beta-carotene of broccoli. Various anti-oxidants and anti-inflammatory compounds are present in bitter gourd.
It also helps in lowering the bad cholesterol levels, thus reducing the risk of heart disease and stroke. That’s not all. It strengthens the immune system, improves respiratory health, boosts skin health and contains anti-ageing properties.
Bitter gourd contains polypeptide, an insulin-like compound called and charantin, which has anti-diabetic properties. These components actively help in reducing the blood sugar levels. It also helps to prevent unpredictable spikes and drops in insulin levels by regulating the metabolism and use of sugar the body has consumed. Bitter gourd acts as a hypoglycemic agent. It is rich source of soluble fiber and is low in glycemic index, which helps in lowering the blood sugar level.
INGREDIENTS
- Baby karela – 4 or 5
- Salt
- lemon juice – 1 tbsp
- Fried moong dal farshan – ½ cup
- Finely chopped onion – ¼ cup
- Red chilli pwdr – 1 tsp
- Coriander pwdr – 1 tsp
- Chaat masala pwdr – ½ tsp
- Amchur pwdr – ¼ tsp
- Roasted fennel seeds pwdr – ½ tsp
- Garam masala pwdr – ¼ tsp
- Roasted jeera pwdr – ½ tsp
- Grated ginger – 1 tsp
- Finely chopped coriander leaves – 2 tsp
- Water – 2 tbsp
- Imli chutney – 1 OR 2 tbsp

PREPARATION
Scrape the karelas with a scraper. Slit the karelas and remove the seeds. Wash it thoroughly. Apply salt and lemon juice and keep it aside for minimum ½ an hr or more. After half an hr again squeeze and wash it thoroughly. Boil the karela for 5 – 6 mins in hot water . Drain the excess water and keep it aside.

METHOD
Grind the fried moong dal into coarse pwdr and transfer to a bowl .
Now add all other ingredients one by one and mix well .
The mixture should not be of dry texture , adjust water [ 2 OR tbsp ] accordingly .
Stuff the boiled karelas .
Heat 1 or 2 tbsp of oil in a flat tawa.
Place the stuffed karelas in it.
Cover and cook.
Fry the karelas on medium flame by turning it frequently .
Do not blacken or burn them.
Once done remove it on a oil absorbent paper.
You can also garnish with finely chopped coriander leaves.
Serve it as side dish.
