INGREDIENTS

  • Bread
  • Butter – 1 tbsp
  • Tomato sauce / ketchup as required
  • Cheese grated as required
  • Very finely chopped capsicum – 1
  • Finely chopped onions – 1
  • Oregano or mixed herbs – 1 tsp
  • Finely chopped coriander leaves – 2 tbsp
  • Pepper pwdr as per taste
  • Chilli flakes – ¼ tsp [optional]
  • Boiled corn – ½ cup

PREPARATION

  1. BUTTER MIXTURE – Take 1 tbsp butter + 1 tbsp tomato ketchup + 1 tbsp grated cheese and mix them well.
  2. FILLING – Make a mixture of capsicum + onion + coriander leaves + cheese + pepper pwdr + oregano + 1 tbsp tomato ketchup + chilli flakes
  3. BREAD CUTTING [ base and rings ] – Take 2 circle cutters one big which fits in the bread and one 2 size smaller than the bigger cutter. First cut all the bread with the bigger cutter you will get a big circle. This is the base. Divide the base equally. One portion reserve it for base .Now place the smaller cutter inside the remaining base and cut it. You get the rings [frame] + small roundels.

METHOD

Spread the butter mixture on the base, place the ring on it and press it lightly so that it sticks.

Now place in the filling in the centre and top it with grated cheese. Repeat this procedure with all the base + frame and also the remaining roundels.

Brush oil / butter on the edges so that it doesn’t dry.

Bake it in a preheated oven  at 180 * for 5 – 7 minutes.

Serve hot with any sauce or dips.

VARIATIONS

You can also make a double or triple decker disc by placing 2 or more rings on the base and increasing the filling…..give it a try !

NOTES

  1. You can add salt for taste but be careful, I did not as the cheese and butter already contain salt.
  2. You can either use brown bread or white bread.
  3. Go for bigger size bread.
  4. You can add any veggies in the filling like mushroom , tomato, corn ,red or yellow capsicum , grated paneer and non vegetarians can add shredded chicken.
  5. Instead of veggies you can make a plain filling of only cheese.
  6. I have tried other shapes also instead of discs.
  7. In convection mode you don’t get the brown toasted effect.
  8. For making without oven refer to the recipe below and toast the bread before cutting it.
  9. The filling can also be sauted lightly for few seconds.
  10. Add ingredients as per your taste.
  11. You can use any cheese ,I have used cheese spread for butter mixture , cubes for filling and mozrella for topping.
