CHICKEN KOLA URANDAI

Chicken  Kola Urundai / chicken  Balls are deep fried minced mutton balls made with beautifully spiced masala. This is a famous dish from Tamil Nadu, a South-Indian state. It can be served as both an appetizer and as a side-dish. This is a very simple recipe.  Kola urundai has a unique texture, it is very crispy on the outside; and soft and flavourful on the inside. 

INGREDIENTS

  • 500gm boneless chicken ( preferably thigh portion or mix breast + thigh)
  • 1 large onion, roughly chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½  tsp. garam masala
  • 1 tsp chaat masala
  • 2 tsp lemon juice
  • 1 tsp butter [ optional ]
  • 2 red chilli flakes
  • 2 tsp saunf /fennel seeds
  • ¼  cup fresh coriander leaves
  • few  fresh mint leaves
  • 1 inch ginger
  • 5 or 6  garlic
  • 3 or as per taste  green chilli
  •  salt
  • 4 tbsp grated coconut
  • 2 tbsp  fried grams [ pottukadalai ] or roasted besan flour
  • oil for shallow or deep frying

METHOD

Clean and completely dry off the chicken pieces, there should be no excess moisture.

Chop into small pieces and keep aside.

Now add all the ingredients one by one [ except the chicken ] and grind into coarse mixture.

remove and keep aside .

Now take the chicken pieces in the mixie jar and make a smooth mixture .

*don’t over beat , else it well become very soft and make it difficult for giving shapes to the kebab.

Transfer the mixture to a bowl with the other ingredients as well and knead well with hands.

 Adjust taste by adding the flavours needed .

Cover the bowl and refrigerate the mixture for minimum  2 hrs or overnight will also . [ optional ]

*Refrigerating helps to firm up the mixture so that it is easier to handle. Also the mixture gets marinated well .

Take a scoop of the mixture and form smooth balls.

Heat a oil in a deep pan .

Slide in the balls . Few at a time .

Stir and fry about 5 to 6  minutes or as needed on each side on medium flame .

Fry till golden brown from all sides .

Drain and remove on absorbent paper .

Serve hot as a starter with any side accompaniments of your choice .
