CLEAR  BOK CHOY SOUP

Bok choy, pak choi, or pok choi is a type of Chinese cabbage

Bok choy also contains vitamin C, vitamin E, and beta-carotene. These nutrients have powerful antioxidant properties that help protect cells against damage by free radicals. Unlike most other fruits and vegetables, bok choy contains the mineral selenium .

Bok choy is an excellent source of vitamin A – one cup gives you 60 per cent of your daily requirement. It is also a good source of vitamin C and is rich in vitamin K. Bok choy is a good source of dietary fibre.

Bok choy has a mild, cabbage-like flavor. As with most dark leafy greens, the green part of bok choy has a slightly bitter mineral flavor. The white stalk is full of water and has a crunchy yet juicy texture.

INGREDIENTS

  • Bok choy leaves – 5
  • Oil – 1 tsp
  • Onion thinly sliced – 1
  • Ginger garlic crushed – 2 tsp
  • Cinnamon – tiny piece
  • Star anise – 1
  • Clove – 1
  • Paneer cubes – ¼ or ½ cup
  • Stock – 1 litre  [ mix 1 maggi cube in 1 litre hot water ]
  • Salt to taste
  • Pepper pwdr and lemon juice  as required while serving

PREPARATION

  1. Separate the bok choy leaves and wash them well. Mud tends to get stick between the stem.
  2. Slice your bok choy leaves and keep aside. We need 2 cups .

METHOD

Heat oil in a pan , add the cinnamon + clove + star anise and give a stir

Add ginger garlic and stir fry for few seconds .

Add onions and stir fry till translucent .

Add the bok choy to the pan and cook for a minute.

The leaves will sweat and  shrink .

Pour the stock and give a mix .

Adjust salt .[  be careful as we have added stock ]

Add the paneer cubes .

Mix everything, bring to a boil and let the soup boil for 4 to 5 minutes stirring occasionally.

Off the flame .

Remove and discard the star anise,cinnamon and clove .

Serve the soup hot .

Sprinkle pepper pwdr and drizzle few drops of lemon while having .

NOTE –

  1. You can add 2 tsp of soya sauce.
  2. Use green onions instead of red.
  3. Add 1 tsp of sugar.
  4. Instead of paneer we can use tofu / boiled shredded chicken /egg / mushroom .
