Coriander pakoras
KOTHIMBIR BHAJIA [ pakoda ] / CORIANDER LEAVES FRITTERS
INGREDIENTS
- Finely chopped coriander leaves – 2 cup
- Besan / gram flour – 1 cup
- Rice flour – 2 tbsp
- Chilli pwdr – ½ tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Chaat masala – ¼ tsp
- Asafoetida – a pinch
- Ginger garlic paste – ½ tsp [ optional ]
- Salt to taste
- Oil to deep fry or shallow fry
METHOD
Take all the ingredients except oil and water in a mixing bowl .
Mix it well with clean hands .[ coriander leaves may leave water ]
Gradually add water and make a smooth and thick batter .
Heat oil in a frying pan.
Drop in the batter with a spoon .
Turn and fry on all sides till golden brown .and crisp [don’t burn it ]
Remove it on an absorbent paper.
Serve hot with ketchup or any chutneys.
NOTES
- You can add a pinch of baking soda to the batter.
- Y not add finely chopped onions.
- For more flavour add chopped spring onions.
- The same batter goes for chilla also .
