Cream of mushroom soup recipe

                                            CREAM OF MUSHROOM SOUP


INGREDIENTS

  • Mushroom finely sliced – 2 cup
  • Garlic – 2 or 3 clove
  • Onion – 1 small chopped
  • Pepper powder – as per taste
  • Butter – 1 tbsp [or less]
  • Olive oil or regular oil -1/4 tsp
  • Milk – ½ cup
  • Corn flour – 1 tbsp
  • Salt – as per taste
  • Water – as per the consistency you want [instead of plain water use stock ]
  • Fresh cream – 1 tbsp [optional]
  • Grated cheese – 1 cube [optional]
  • Mixed herb pwdr or oregano – ¼ tsp [optional]
  • Amul fresh cream – for garnishing.

METHOD

Take a pan and heat butter + oil.

Add onion and garlic and saute till light golden brown.[dont burn]

Add the mushroom and saute for 2-3 minutes.[the colour should not change ,fry on low flame]

Remove from flame and allow it to cool.

Blend or grind it to a fine sauce by adding 2 1/2 or 3 cup water. [add water as per the consistency you want]

Strain it.

Take a sauce pan, add the mushroom sauce and cook for a minute by stirring.

Mix well the cornflour + fresh cream + milk [see that there are no lumps].

Add this mixture to the mushroom and cook for 2 minutes .

Keep stirring.

Add the salt + mixed herb pwdr  and pepper powder and cook for 1min.

Add grated cheese ,mix well till cheeses melts .

Off the flame.

Garnish with fresh cream and serve hot with garlic bread.

NOTES

  1. Instead of plain water , use stock made from maggi cubes. Boil water + maggi magic cubes.
  2. Reserve few fried mushroom for garnish.
  3. Why not add cheese for cheesy taste .
